Ingredients: 2 large or 4 small golden potatoes 1 large or 2 small vidalia onions olive oil salt Instructions: 1. Set oven to 425F, convection mode recommended 2. Place parchment paper on baking pan 3. Slice onions thinly, layer on pan 4. Slice potatoes using mandolin, about 3mm thick 5. Evenly distribute the potatoes on top of the onions 6. Lightly drizzle olive oil on top 7. Dab with paper towel to spread oil evenly and reduce excess 8. Sprinkle salt to preference 9. Put in oven for 15-20 min 10. Take out when onions are slightly burnt at the edges and clear in the middle |
